NOVUM CELLARS was created from a desire to bring wine back to its roots—authentic, expressive, and deeply connected to place. After 15 years in the industry, our founder saw how the heart of wine had been overshadowed by mass production and corporate sameness. In a space once defined by character and craftsmanship, something essential had been lost.

We set out to change that.

At NOVUM, authenticity isn't a buzzword—it's a guiding principle. Our debut release—a skin-contact Muscat Canelli from Mendocino County—is both a tribute and a mission statement. It reflects where our journey began and what we stand for: organic and regenerative farming, honest winemaking, and a respect for overlooked regions like Mendocino, whose beauty and potential deserve more attention.

The name NOVUM translates from Latin as “new” or “different,” and that’s what we aim to be: a wine company shaped by curiosity, integrity, and a willingness to explore beyond the familiar. With over 1,300 winegrape varieties cultivated around the world, the industry's focus on a handful leaves so many stories untold. We want to help change that.

As we grow, you’ll see us champion lesser-known varietals and partner with growers who share our care for the land and the future. Every wine we produce is made from organically or regeneratively certified grapes, because we believe what’s in your glass should reflect a deeper commitment—to craft, to nature, and to meaning.
